Healthy Carrot Walnut cake

 


Healthy and tasty carrot cake recipe!!!

Ingredients:

Wet Ingredients:

  • Eggs - 4
  • Butter - 1 stick or ( 1/2 cup vegetable oil )
  • Sugar - 1 1/4 cup
  • Vanilla essence - 2 tsp
Dry ingredients:

  • All purpose flour - 2 cups
  • Baking powder - 2 tsp
  • Baking Soda - 1 tsp
  • Salt - 1/2 tsp
  • Cinnamon powder - 1/2 tsp

Others:

  • Carrot - 3 cups grated ( 4 medium sized)
  • Walnuts or pecans -  1/4 cup

Directions:

  1. Pre heat oven to 350 degree Fahrenheit or 180 degree Celsius.
  2. Keep butter and eggs ready at room temperature. 
  3. In a bowl add the wet Ingredients: eggs, butter, sugar, vanilla and beat them for 2 to 3 minutes.
  4. Mix the dry ingredients : All purpose flour, Baking powder , Baking Soda ,Salt ,Cinnamon powder in another bowl.
  5. Stif the dry ingredients over the wet Ingredients.
  6. Mix the dry Ingredients with the wet and beat them using beater.
  7. Now just fold in the grated carrots and chopped walnuts. Just mix , don’t use beater at this stage.
  8. Line a 8 inch cake pan with parachment or wax paper and pour the cake mix into the cake baking pan.
  9. Bake for 45 minutes to 50 minutes until a toothpick inserted comes clean.
  10. Take out the baking pan and cool the cake and serve!!!
  11. Healthy and delicious carrot cake ready!!!

Notes: You can also pour the same batter in muffin or cupcake pan and make muffins or cupcakes baking at 350F or 180C  for for 30 to 35 minutes.

      What can I substitute the sugar with? I was thinking of dates. Would that work?
