Healthy and tasty carrot cake recipe!!!
Wet Ingredients:
- Eggs - 4
- Butter - 1 stick or ( 1/2 cup vegetable oil )
- Sugar - 1 1/4 cup
- Vanilla essence - 2 tsp
Dry ingredients:
- All purpose flour - 2 cups
- Baking powder - 2 tsp
- Baking Soda - 1 tsp
- Salt - 1/2 tsp
- Cinnamon powder - 1/2 tsp
Others:
- Carrot - 3 cups grated ( 4 medium sized)
- Walnuts or pecans - 1/4 cup
Directions:
- Pre heat oven to 350 degree Fahrenheit or 180 degree Celsius.
- Keep butter and eggs ready at room temperature.
- In a bowl add the wet Ingredients: eggs, butter, sugar, vanilla and beat them for 2 to 3 minutes.
- Mix the dry ingredients : All purpose flour, Baking powder , Baking Soda ,Salt ,Cinnamon powder in another bowl.
- Stif the dry ingredients over the wet Ingredients.
- Mix the dry Ingredients with the wet and beat them using beater.
- Now just fold in the grated carrots and chopped walnuts. Just mix , don’t use beater at this stage.
- Line a 8 inch cake pan with parachment or wax paper and pour the cake mix into the cake baking pan.
- Bake for 45 minutes to 50 minutes until a toothpick inserted comes clean.
- Take out the baking pan and cool the cake and serve!!!
- Healthy and delicious carrot cake ready!!!
Notes: You can also pour the same batter in muffin or cupcake pan and make muffins or cupcakes baking at 350F or 180C for for 30 to 35 minutes.
