Chicken Dum Biryani

Measurement 1 Cup = 250 ml

Ingredients Required:

For marination

    Chicken 1/2 Kg
    2 onions fried or caramelized
    2 Green chillies
    Garam masala -1 tblspn
    Ginger Garlic paste - 2 tblspn
    Lemon juice - 1 tblspn
    Chilli powder -2 tblspn
    Coriander powder - 2 tblspn
    Tumeric powder - 1 tspn
    Curd - 3/4 Cup
    Coriander leaves - 1/2 cup
    Mint leaves - 1/2 cup
    Oil - 1 tblspn

    • Day  1 process
    Ingredients for marinating chicken

    1st marinate the chicken using lemon juice and salt and keep it for 5 minutes
    Then marinate the chicken using the other items given under marination ingredients
    Refrigerate the marinated chicken overnight of for minimum 8 hours

    • Day  2 process
    Keep the other ingredients- saffron soaked milk, 1/2 onion fried or caramelized, finely chopped mint and coriander leaves ready 

    Soak basmathi rice for 30 minutes

    To make rice, boil 4 to 5 cups of water with 1 tblspn ghee and half  of the spices given under ingredients; when it boils, add rice and cook until its 80 to 90% done and then drain it. It takes approximately 7 minutes for it.

    Heat the pan for making biryani, add 1 tblspn ghee, when it heats up, add the remaining spices,  marinated chicken

    Cover it and cook it in low flame for 7 minutes.
    Add the drained rice to the chicken, layer it with mint, coriander leaves, fried onions and pour saffron milk

    Cover the vessel with an aluminum foil and then with a heavy lid so that air doesn't go out.
    To cook in oven preheat oven to  360F  or 180C and place it for 25 to 30 minutes. (don't use glass lid for oven)
    To cook in stove, place the pan over a dosa tawa in low heat for 45 to 50 minutes. 
    Yummy dum biryani is ready

    Steps

    • Day  1 process

      1. Marinate chicken with lemon juice and salt and keep it for 5 minutes.
      2. Then  marinate it with the other items given under marination ingredients.
      3. Refrigerate overnight  or for minimum 8 hours

    • Day 2 process
    How to make rice

      1. Soak briyani rice for 30 minutes. 
      2. In a pan put 1 tblspn Ghee and then half the quantity of  whole spices given above and then add water(4 to 5 cups) required for making rice.
      3.  When water boils add the rice and cook until 80 to 90 % done.(It takes approximately 7 minutes for this) and then drain it.

    How to make biryani

        1. In a heavy bottomed pan add 1 tblspn ghee and the remaining whole spices and then add the marinated chicken.
        2. Saute it and keep it covered in low flame for 5 to 7 minutes.
        3. Then add the drained rice to the chicken.
        4. Layer it with some fried onions , mint leaves and coriander leaves.
        5. Pour the saffron milk.
        6. Cover the vessel with an aluminum foil and then with a heavy lid so that air doesn't go out.
      Cooking process
