Chicken Fried rice with smokey flavor | Hotel-style chicken fried rice at house
Try making this awesome and so yummy hotel-style chicken fried rice at home. I have used the oil that I have used for frying chicken to make fried rice and egg, don’t skip that it gives an amazing flavour. And the charcoal burning gives a very awesome smoky flavour to the fried rice.

Ingredients:
- 2 cups Basmati rice
For marination:
- 3/4 kg Chicken
- 11/2 tsp Chilli powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Pepper
- 2 tsp Ginger garlic paste
- Salt
Vegetables:
- 1/4th Small cabbage
- 1 Small Carrot
- 1/2 Capsicum
- 1/2 Bunch Spring Onion
- 1 tbsp Ginger Garlic paste
Spices and Sauces:
- 1/2 tbsp Vinegar
- 1/2 tbsp Soy sauce
- 1 tsp sugar
- 1 tsp pepper
- 2 red chilies roasted and crushed
- Salt as needed
Directions:
Get all things ready:
- Marinate chicken and keep it ready.
- Cook rice in boiling water for around 7 minutes, with salt and oil until it's 90% done, and drain it. Make sure the rice is not sticky. Cool rice completely.
- Chop vegetables.
- Fry chicken and cut into small pieces.
Preparing Fried rice:
- Heat a large pan in HIGH flame and add chicken fried oil.
- Add chopped veggies and saute for 2 minutes. (The vegetables should NOT leave the water)
- Add ginger garlic paste and salt.
- Saute for a minute.
- Add cooked and cooled rice.
- Add salt, pepper, soy sauce, sugar, vinegar, and roasted crushed chilies and toss it.
- Add fried chicken and toss.
- Scramble some eggs in chicken fried oil with salt and pepper and add it to the rice.
- Toss the rice.
