Nutritional value and health benefits of Kambu:

  • Kambu has 8 times Iron content higher than in Rice.

Now let us look into the Kambu Idli/Dosa recipe!!!


Ingredients:

  • 2 cups Pearl Millet/ Kambu/ Bajra
  • 2 cups Idli rice
  • 1 cup Urad dhal
  • 1 tsp Fenugreek seeds

Directions:

  • Wash the ingredients and soak for 8 hours.
  • Grind Urad dhal until its fluffy by adding little water at frequent intervals.
  • Grind Kambu, rice , fenugreek seeds until smooth.
  • Mix the grinded ingredients well.
  • Ferment for 8 hours.
  • Make soft Idlis and crispy dosas.

Note:

  • First two days batter after fermentation is best for making soft Idlis and after that the batter is good for making crispy dosas.
  • If you are new to millet, you can start by altering the ingredients as '1 cup kambu and 3 cups idli rice' instead of '2 cup kambu and 2 cups idli rice'.
  • You can also increase the quantity of urad Dhal up to 1 1/4th cup depending upon the quality of your urad dhal.

    We love eating Kambu idli with the peanut chutney or capsicum chutney that i have already posted !!!!
    Kambu idli or dosa can also be had with other varieties of chutney and sambar as we have for normal rice idli and dosa.
