Zucchini Fritters is a very healthy snack recipe loaded with veggies.

Ingredients:
Notes: If you don’t have Parmesan cheese, you can use any other cheese.
- Zucchini - 3
- Eggs - 2
- Chilli Flakes - 1/2 tsp
- Pepper Powder - 1/4 tsp
- Salt - 1/2 + 1/4 tsp
- Garlic - 2 Cloves
- Coriander leaves - few
- All Purpose Flour - 1/4 cup
- Parmesan Cheese - 1/4 cup
- Oil - 3 tbsp
- Grate the zucchinis.
- Add salt to the grated zucchini and let it rest on a cheese cloth for 10 minutes. This is done to drain the water from zucchini. After 10 minutes squeeze the zucchini in cheese cloth and drain water from zucchini as much as possible. Keep it aside. Don’t skip this step or the fritters will be soggy.
- In a bowl add 2 eggs, pepper powder, red chilli flakes, finely chopped garlic , flour , Parmesan cheese, the drained zucchini and salt.(Check and put correct quantity of salt because we have already put salt while draining zucchini)
- Mix well.
- Heat oil in a wide pan and shallow fry the zucchini mix in medium flame until golden brown on both sides.
- Yummy zucchini fritters ready!!!! Serve warm with mayonnaise or sour cream.
