I have posted the above video in which ghee rice is served with chettinad chicken curry.
Now let us look into the ghee rice recipe
Ingredients:
Whole Spices:
- Bay leaf - 1
- Cinnamon - 1 inch stick
- Star Anise - 1
- Cardamon - 1
- Cloves - 2
Others:
- Basmathi Rice - 1 1/2 cup
- Ghee - 2 tbsp
- Onion - 1/2(medium size)
- Green Chillies - 2 to 3
- Ginger Garlic Paste - 1 tsp
- Mint & Coriander Leaves - 1/4 cup
- Curd - 1/4 cup
- Water - 1 1/2 cup
- Coconut Milk - 3/4 cup
- Salt - As needed
Directions:
- Wash basmathi rice and soak for 10 minutes.
- Heat pressure cooker or rice cooker or instant pot.
- Add 2 tbsp ghee and the whole spices given under ingredients.
- Add thinly sliced 1/2 onion and green chillies and saute.
- Add 1 tsp ginger garlic paste & saute.
- Add finely chopped mint & coriander leaves, 1/4 cup curd and saute.
- Add 1 1/2 cup basmathi rice, 1 1/2 cup water, 3/4 cup coconut milk and salt.
- Pressure cook for 1 whistle or keep in rice mode in rice cooker or instant pot.
- After pressure naturally releases, slightly mix the rice with fork so that it doesn't break.
- Serve warm with Chettinad chicken curry or any veg kuruma.
