Ghee Rice or Nei Sadam


 

I have posted the above video in which ghee rice is served with chettinad chicken curry.

Now let us look into the ghee rice recipe

Ingredients:

Whole Spices:
  • Bay leaf - 1
  • Cinnamon - 1 inch stick
  • Star Anise - 1
  • Cardamon - 1
  • Cloves - 2
Others:

  • Basmathi Rice - 1 1/2 cup
  • Ghee  - 2 tbsp
  • Onion - 1/2(medium size)
  • Green Chillies - 2 to 3
  • Ginger Garlic Paste - 1 tsp
  • Mint & Coriander Leaves - 1/4 cup
  • Curd - 1/4 cup
  • Water - 1 1/2 cup
  • Coconut Milk - 3/4 cup
  • Salt - As needed

Directions:
  • Wash basmathi rice and soak for 10 minutes.
  • Heat pressure cooker or rice cooker or instant pot.
  • Add 2 tbsp ghee and the whole spices given under ingredients.
  • Add thinly sliced 1/2 onion and green chillies and saute.
  • Add 1 tsp ginger garlic paste & saute.
  • Add finely chopped mint & coriander leaves, 1/4 cup curd and saute.
  • Add 1 1/2 cup basmathi rice, 1 1/2 cup water, 3/4 cup coconut milk and salt.
  • Pressure cook for 1 whistle or keep in rice mode in rice cooker or instant pot.
  • After pressure naturally releases, slightly mix the rice with fork so that it doesn't break.
  • Serve warm with Chettinad chicken curry or any veg kuruma.
