Broccoli Frittata basically an egg omelette made with broccoli and then topped up with cheese and baked in oven. This recipe is very healthy and is a very good way to make kids eat broccoli.
Ingredients:
To Saute in oil & cool down:
- Olive Oil - 3 tsp
- Broccoli - 2 cups
- Salt
- Eggs - 6
- Cooked & cooled broccoli
- Garlic - 1 clove
- Milk - 1 tbsp
- Pepper powder - 1/2 tsp
- Red Chilli Flakes - 1/2 tsp
- Oregano - 1 tsp
- Coriander leaves - few
- Salt
- Butter - 1 tbsp
- Mozzarella Cheese - 1/2 cup
- Cheddar cheese - 1/2 cup
- Heat olive oil in a pan, add finely chopped broccoli, salt and saute for ~ 2 min. Cool down.
- In a bowl crack open 6 eggs, add cooled broccoli, finely chopped garlic - 1 clove, milk - 1 tbsp, pepper powder - 1/2 tsp, red chilli flakes - 1/2 tsp , oregano - 1 tsp, finely chopped coriander leaves, salt and mix well.
- In a cast iron pan or oven safe pan, heat butter and add the broccoli egg mix. Top up with the shredded mozzarella, cheddar cheese.
- Bake this egg broccoli cheese mixture in oven at 375°F or 190°C for 20 minutes.
- After 20 minutes, healthy and tasty broccoli frittata ready.
- Slice and serve broccoli frittata hot!!!
